Ingredients

For the Tofu Marinade:

  • 400g Firm Tofu (cubed)
  • 1/2 cup Vegan Yogurt (unsweetened)
  • 2 tbsp Lemon Juice
  • 2 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • 1 tsp Turmeric
  • 1 tsp Red Chilli Powder
  • 2 tbsp Ginger Garlic Paste
  • 1 tbsp Garam Masala
  • Salt and pepper to taste

For the Tikka Masala Sauce:

  • 2 tbsp Vegetable Oil
  • 2 Onions (finely chopped)
  • 4 cloves Garlic (minced)
  • 1-inch Ginger (grated)
  • 1 can Crushed Tomatoes (OR Tomato Puree)
  • 1 tbsp Tomato Paste
  • 2 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • 1 tsp Turmeric
  • 1 tsp Red Chilli Powder
  • 1 tsp Garam Masala
  • 1 cup Canned Coconut Milk (full fat, unsweetened)
  • Salt and pepper (to taste)
  • Fresh coriander (for garnish)
  • Roti or Naan to serve
  • vegan butter

Instructions

  1. In a bowl, combine the vegan yogurt, lemon juice, cumin, coriander, turmeric, ginger-garlic paste, salt, and pepper. Mix well to combine all spices with the vegan yoghurt.
  2. Add the cubed tofu and toss gently to coat. Let it marinate for at least 30 minutes, or longer for better flavor.
  3. Preheat a grill or cast iron pan to medium-high heat.
  4. Thread the marinated tofu cubes onto skewers. Grill or roast for about 15 minutes, turning occasionally, until they're lightly charred. Set aside
  5. In a large skillet or pan, heat the vegetable oil over medium heat.
  6. Add the chopped onions and sauté until they become translucent, about 5 minutes.
  7. Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  8. Add the coriander powder and turmeric to the onions and cook until aromatic. Add the tomato paste and cook until the color of the paste changes to a dark brown color.
  9. Now, add the cumin, red chilli powder, and garam masala. Stir well and cook until the raw aroma of the spices has gone.
  10. Add the crushed tomatoes or tomato puree and mix well to combine.
  11. Let the sauce simmer for 10-15 minutes until the sauce thickens.
  12. Once the sauce thickens, remove the tofu from the skewers and gently add to the sauce.
  13. Pour in the canned coconut milk and stir until well combined. Simmer for an additional 5 minutes to heat the tofu and meld the flavors together.
  14. Season with salt and pepper to taste.
  15. Serve your Vegan Tofu Tikka Masala Roti or Naan slathered with vegan butter
